Salada de espadarte grelhado com beterraba e cenoura
Ingredientes
1 limão, cortado
570g espadarte
3/4 colher de chá de sal, dividido
6 raminhos de estragão fresco e 2 colheres de sopa de estragão bem picadinhos
5 colheres de sopa de azeite extra-virgem
¼ xícara de suco de limão
1 colher de chá de grãos inteiros de mostarda
¼ colher de chá de pimenta do reino
2 cabeças de alface manteiga, rasgada
1 beterraba grande, de preferência de ouro ou Chioggia, desfiada
1 cenoura grande, cortada
spray de cozinha ( oleo )
Preparação
Pré-aqueça o grelhador para médio.
Pegue num pedaço de papel vegetal de cozinha e corte ( tem de chegar para todo o peixe ) De seguida tempere o peixe com um pouco do óleo ( spray cozinha ). Coloque uma camada de fatias de limão sobre o papel e coloque o peixes sobre o limão. polvilhe com sal e cubra com raminhos de estragão.
Grelhe o peixe na folha de papel (sem virar) durante cerca 12 a 20 minutos, dependendo da espessura. Enquanto isso, misture o óleo, o sumo de limão, o estragão picado, a mostarda, a pimenta e o sal, meia colher de chá restante, numa tigela.
Misture a alface com cerca de quarto de xícara do molho numa tigela grande; dividir em quatro placas. Adicionar beterraba e cenoura à tigela; misture com duas colheres de sopa de molho.
Divida o peixe entre as placas (descartar os raminhos de estragão e rodelas de limão). Regue com o molho restante.

This grilled swordfish salad is packed full of omega-3, vitamin C and iron.
Ingredients
1 lemon, sliced
570g swordfish, skinned
3/4 tsp salt, divided
6 sprigs fresh tarragon plus 2 tablespoons finely chopped, divided
5 tbsp extra-virgin olive oil
¼ cup lemon juice
1 tsp whole-grain mustard
¼ tsp freshly ground pepper
2 heads butterhead lettuce, torn
1 large beet, preferably golden or Chioggia, shredded
1 large carrot, shredded

Method
Preheat grill to medium.
Measure a piece of foil large enough to hold the fish and lightly coat it with cooking spray. Place a layer of lemon slices on the foil and lay fish on the lemon slices. Sprinkle with quarter teaspoon salt and top with tarragon sprigs.
Grill the fish on the foil (without turning) until it flakes easily, 12 to 20 minutes, depending on the thickness. Meanwhile, whisk oil, lemon juice, chopped tarragon, mustard, pepper and the remaining half teaspoon salt in a bowl.
Toss lettuce with about quarter cup of the dressing in a large bowl; divide among four plates. Add beet and carrot to the bowl; toss with two tablespoons of the dressing.
Divide the fish and slaw among the plates (discard the tarragon sprigs and lemon slices). Drizzle with the remaining dressing.
